Melt Unsalted Butter in a medium pot, then add Flour and whisk vigorously until a paste forms. Add Milk and continue to whisk until the Roux thickens.
Add Velveeta, or other melting cheese, Mrs. Miller’s Mild Mustard, Salt and Pepper, and whisk until all the cheese is melted and smooth.
